Sausage and Veggie Casserole

As the season starts to cool off and move into the fall I like to get into the kitchen a little more often to make some warm and hearty meals. This easy to make sausage casserole will have you making it over and over again as a weeknight or weekend meal for yourself or any company that you may have. The best part is that you will have plenty of leftovers for work and will keep your kitchen clean for a few days afterwards. You will need a large casserole dish something larger then the usual 13 x 9 inches and I prefer to use mini/fingerling potatoes as I enjoy the taste of the potato skin but if your using a regular potato I would go with a russet potato quartered. You can also add any vegetable that you may like but I would avoid any that hold a lot of  water like a tomato, cucumber or zucchini and stick to the more solid vegetables to avoid a mess in the casserole dish. I used Italian style sausage which are easier to find and although my preference is the spicy sausage a mild or fennel type would do just fine.

How to make Lasagna


I  have eaten lasagna on many occasions but the one thing I have not done is try to make it myself. Lasagna is just one of those comfort foods, its filling and after one or two pieces you just get that satisfied feeling. I spoke with family and friends and checked the internet to see what people did to create their own lasagnas and I felt ready to create my own version of lasagna. I liked that I was able to add some of my favourite ingredients, like mushrooms, spinach and cheeses. The key I found was using a baking dish that is 11 x 8 in size as the lasagna noodles fit perfectly inside and don't be afraid to pack things down as you layer, you want to make sure that all your ingredients fit. I decided to go heavy on pasta sauce also as I wanted to make sure the lasagna was covered to avoid dryness. You can decide to substitute the cheeses I used but I find that cheddar and mozzarella work great with this dish so you do not have do unless you really want parmesan or ricotta.

Lunch Time Chili Tacos

Who doesn't like tacos, a tasty meal that you can place inside a soft shell or a hard shell. You can choose to buy a taco kit with the shells, seasoning and salsa or like me you can choose to use a homemade chili recipe, that's full of beans, ground beef or ground turkey, salsa and of course chili seasoning, this option takes a bit more time but its well worth the time. The taste you get from your own chili is hard for a package to beat.
There are a variety of shredded cheeses that you can place inside the taco, it all comes down to your taste buds, cheddar is my favourite but you can also try monterey jack or mozzarella. I also enjoy cutting up some avocado to give myself some carotenoids which help in absorbing nutrients into our bodies.
The type of lettuce you can use also is based on your preference, I used romaine lettuce but green leaf or boston lettuce does the trick also.

Paprika Parmesan Baked Chicken

Chicken is a very popular meal in most parts of the world and who doesn't like the white meat from chicken. Baking is always the best way to go when making almost any dish for not only health reasons but mixed with the right seasoning just about anything that you place in the oven will come out to your liking and taste just right. When I was growing up chicken was always a meal I could look forward to on Sundays and a few other days of the week.

You will need a large sized baking dish to bake the chicken and you will always need a wet coating mixture to have all the seasoning stick to the chicken breast. The cook time is important and at the temperature that the oven is set to bake, it will be a long cooking process but chicken is a food that you want to make sure is baked right. I enjoy shredded parmesan cheese but if your preference is cheddar or mozzarella go with it. This dish can go with just about any side, have a look through our blog to find the side that has your taste buds watering.
