After a few tries I found a perfect combination of time and temperature along with some of my favourite seasonings mixed into the chicken fillet and avoided the mess that comes with cooking the chicken in a frying pan. Some may not enjoy the seasoning mixture that I went with but feel free to use some of your own blends until you have exactly what you want. It is much simpler to buy the chicken breast already filleted at your local grocery store but for those that do not mind adding a little additional time to their prep, go for it. This is one of my favourite dishes growing up with my family, it is quick to make and so delicious you'll be wondering why you did not know about it sooner. The key ingredients to this recipe are potatoes, tuna and eggs and these just can not be substituted if you are looking to maintain an authentic western European style dish. The potatoes can be boiled or baked in the oven, it's really your choice if you are looking for a soft or crispy texture. The recipe below will describe how to boil the potatoes but if you are looking to bake them then what you will need to do is preheat your oven to 400F, mix the potatoes with olive oil sea salt, black pepper and garlic powder and bake covered for 45 minutes then uncover for the final 10 minutes. One thing we can do to help pass the time is to make sure that we feed ourselves right and keep busy and what better way to do that then to spend time in the kitchen cooking up a storm. This was my first crack at a meatloaf recipe and I feel it was so good that I just had to share it with all of you around the world. The recipe is quite simply and filling and what more can you ask for. I would recommend that you give it a try with the ingredients before swapping in some of your favourites, I prefer a sweet BBQ sauce over Ketchup and the saute yellow onion adds a nice taste to the dish. I also went with ground turkey to keep the meal a bit healthier. The two loafs was my way of adding a cool twist to the regular meatloaf dishes and I did find it better to cook on a wire racked on a baking sheet on top of parchment paper. The classic pub style sandwich you can have at home instead of getting out into the world which is currently going through a corona virus pandemic. The classic club house is one of my favourite sandwiches when out a pub and munching down on some pub food classics. This is a recipe that you can enjoy in the comfort of your own home, especially for those that can not get out and about as they normally would. I created a classic club at home with a couple of changes that worked out just great but feel free to substitute ingredients as you see fit. I boiled the chicken for a quicker meal prep and the bacon was baked in the oven to avoid mess covered in aluminum foil, you'll need to bake longer then time shown if you prefer your bacon to be crispy. I am not a mayo fan so replaced it with some old style dijon mustard and the texas style toast bread is a must, make sure you use real cheese slices and not the process kind for best taste.<br />

Well Happy 2020 to everyone, I am back again sharing a wonderful side dish recipe that can go with just about any dish from meat to fish. Sweet Potato is a healthier alternative to regular potatoes as they are packed with fibre and are a rich source of minerals which include calcium and iron. This recipe is quick and easy to make as long as your fine with getting your hands a bit dirty. Get yourself out a large bowl to mix the potatoes with all the ingredients that are being used and you will also need a large baking sheet to lay out all the potatoes so that they are evenly cooked. They key ingredients to this recipe along with the sweet potatoes are honey and cinnamon, these two additional ingredients will give the dish a sweet, smokey and savoury taste, so make sure you do not omit them from the recipe.<br />

As the season starts to cool off and move into the fall I like to get into the kitchen a little more often to make some warm and hearty meals. This easy to make sausage casserole will have you making it over and over again as a weeknight or weekend meal for yourself or any company that you may have. The best part is that you will have plenty of leftovers for work and will keep your kitchen clean for a few days afterwards. You will need a large casserole dish something larger then the usual 13 x 9 inches and I prefer to use mini/fingerling potatoes as I enjoy the taste of the potato skin but if your using a regular potato I would go with a russet potato quartered. You can also add any vegetable that you may like but I would avoid any that hold a lot of water like a tomato, cucumber or zucchini and stick to the more solid vegetables to avoid a mess in the casserole dish. I used Italian style sausage which are easier to find and although my preference is the spicy sausage a mild or fennel type would do just fine.<br />

As the summer ends I seem to turn my cooking attention to savory meals, that you just can not get off those summer BBQ sessions. This is the perfect time to start enjoying delicious stewing meat that just tends to melt in your mouth with every chew. Stewing meat is always a tough cut of meat and should be seasoned and stored in the refrigerator for at least 8 hours minimum but if you can do 24 hours then even better. The key to getting the meat to its soft point is to make sure you boil it in a beef broth for an extended period of time, so this meal tends to be ideal for when you have a free day with a lot of hours on your hands. The searing is another important part of this recipe because it will hold the juices in the meat as your spiced beef works its way to perfection, make sure that you add a favourite side dish to go along with your beef. Rice, vegetables or any of your favourites should be served along side your meat.</div>

The summer is upon us and as we get outdoors and enjoy the weather we turn on the grill and cook. The one thing that we need when we are grilling meat on the BBQ is a good side dish to go along with it. This is a simple side dish recipe that goes along with just about anything that you have as an entree. You will need to pick up a large bag of carrots, peel them, then to have your guests in awe, cut the carrots on a diagonal angle as shown in picture. This will ad a little fanciness to your side dish of carrots. The seasoning is what will give your carrots that sweet and spicy taste so do not omit the cinnamon or chili powder, a little sea slat for the palette and my favourite for most recipes at bit of garlic. Make sure to use a baking dish that is 9 x 13 this will be large enough to hold all the carrots.<br />

This is a perfect green bean recipe for all those vegetable lovers out there. Green beans go well as a side dish for many different main entrees and this recipe is a good replacement for those that enjoy french fries but would like a healthier option. Roasting the green beans in the oven for an extended period of time will give them a crunchy texture, it will almost be as if you are eating fries but I would think twice about adding any ketchup. The key of this recipe is that when you are roasting the green beans on a baking sheet make sure that you separate them individually so that they roast evenly, use a mixing bowl to season the beans with all the ingredients and mix them together with your hands. Make sure that you keep an eye on the green beans while roasting them in the oven and do not exceed the cooking time or the beans will shrivel up and not bearable to eat.<br />

This has been a cold winter and my family always told me its best to keep your insides warm this way it will help with your outside and what is better to bring up your internal temperature up then some food with a little bit of spice. Chicken is a nutritious meal and baking it just right makes sure to leave the juices intact and makes every bite just a little bit more enjoyable. I love to mix and match seasonings looking for just the right mixture and with this seasoning combination I am sure that those that try this meal will be content with the results. You can always add any spices that your palate enjoys and the longer you can refrigerate the chicken the better but sometimes we do not always have the time to prepare our meals for an extended period and the shorter period works just fine. Make sure to use a baking sheet to cook your chicken breast and fresh parsley is always just a bit better then dried parsley but use what you have on hand.<br />

The holiday season is upon us and after many filling lunches and dinners with tonnes of leftovers to hold us over for days, it would be nice to have a tasty breakfast during the season especially if we had one too many cups of eggnog. This was something I came up with one morning while laying in bed wondering what would be on the menu for breakfast. This tasty dish is loaded with foods to get us fueled for the day and is filling in its own sense and does not require anything additional sides to accompany it. The key to this recipe is the base and you must use a Bavarin style bread, Rudolph's is my go to multi grain bread as the size of the loaf is perfect for this meal as well as light breakfasts. Shredded mozzarella gives it a mild taste but if you prefer something more sharp or intense flavour you can go with strong cheddar or gorgonzola. A natural butter spread is preferred over margarine and make sure to use a large skillet. Top with sunny side eggs to give it that island look.<br />

The holiday season is upon us and it is time to get that kitchen going as guests visit and pot lucks begin with family and friends. You can not go wrong with a great side dish, as many of us try to think what type of a main entree we would like to cook up we tend to not focus as much on what would go with that meal. My family always told me that a great entree needs the same quality of side dish to accompany it and make every bite enjoyable. This side dish is all vegetable and I like to stick to two of my favourites which are potatoes and carrots but you can also add some of your favs to the dish which can include zucchini, sweet peppers, celery or asparagus. The baking dish should be at minimum 9 x 13 but larger is fine to and when mixing all the ingredients do not be afraid to mix everything up with your hands so that you every vegetable is being seasoned properly. Cheese lovers can also sprinkle some parmesan on top or serve with some chopped fresh rosemary.<br />

Mini Sliders a popular appetizer or for some a main course meal when they are out at many pub style restaurants. I decided to give this tasty treat a try at home and found that I created a very similiar style meal just like you would enjoy at your local local pubs and the best part is you can create as many as you like in the comfort of your own kitchen. Eggs are a key ingredient to create the sliders from scratch as this is the best binding agent and helps to keep the ground beef from falling apart. I would recommend that you use a lean ground beef and for some of the more self conscious meat eaters you can even try lean ground turkey or chicken. You can pick up medium (mini) buns at your local grocers and when you are making the patty you want to get them to around the size of the palm of your hand. The cheese used should be natural cheese slices and you would cut them into four even parts to place on the burger patty. Chipotle sauce is a must have topping.</div>

The summer is finally here and after a long winter, I like to make sure to enjoy the extra day light and sunshine and one thing this tends to cut into is my cooking times. I find that I am just not home long enough to get into some intense meals so my summer months in the kitchen tend to turn into what can I make quickly so that I can get out and enjoy a walk or a run. I tend to make a lot of sandwiches for dinner and figured, why not make those sandwiches healthy to go with my healthy activities. This recipe is quick and easy and more importantly tasty and full of nutrition. What you want to use for bread is a whole grain or multi grain, your choice of any type of tomato or cucumber but make the cuts of the thin variety, tear up your lettuce and spread the avocado mixture on both sides of the bread. The seasoning of the avocado is key, so make sure to use a quality balsamic vinegar and olive oil. Finish it off what a little bit of sriracha sauce for those looking for a little kick in their meal.<br />

It has been a little time since my last post and I hope to add a few recipes to the blog over the next few weeks, I will start it off today with a tasty dish of pasta. Pasta tends to be a delicious part of my entree meals through out the month and my favourite types of pasta are Penne, Spaghetti and Linguine. I also tend to incorporate spice into my meals, now I know not everyone is a big fan of spicy food but I just love it. Those that have been to restaurants especially Italian ones have had or seen arrabbiata on the menu, which basically means spicy sauce. I decided to use spaghetti but any long strain of pasta would work, like linguine, fettuccine or angel hair. Then to bring in the heat I used a tomato sauce with chilies as well as chili flakes the amount in the recipe provides a decent amount of spice but use more or less depending on your taste buds. I also decided to go heavy on veggies but you can omit or even add more to the recipe as you like as for the ground meat I used pork because basically it was all I had on hand and worked great but give beef a whirl. <br />

<span style="font-size: large;">1- Heat large pot on medium heat and add ground pork, cook until brown about 3-4 minutes.</span></div>

<span style="font-size: large;">2- Drain grease from pot, use mesh to hold in meat, add olive oil, onion, garlic cloves, carrots and celery, cook 3 minutes stirring to combine.</span></div>

It has been awhile since my last post as at times life gets in the way of blogging but it doesn't stop me from making delicious recipes. I am glad to be back blogging with what I found to be a delicious and healthy recipe to share with you all. There is just something about smoked chorizo that gets my mouth watering and when you add protein and fiber rich chick peas to the dish it packs it with a tonne of flavour. You will need to use a large skillet for the meal and make sure that the beer you use is a pilsner but an ale will work almost as well. I went with a faster root for the chickpeas and just got them from a can, you will just need to wash them thoroughly before adding them to the dish. When it comes to the simmering of the recipe it depends how saucy you enjoy your meals but a longer simmer will reduce the liquid and make it sparse and thick which is the way I prefer this dish to be.<br />
The chorizo I chose to use was spicy as this is my fav but for those with milder taste buds can chose a non spicy sausage.<br />

This recipe is a dish that is savory, spicy and with a lot of garlic, some of you will enjoy it as an appetizer before their meals, while others like me like to finish off seafood as a dessert. This traditional dish has been passed down the family tree, at times I even enjoy it as a quick snack with a side of bread for dipping. This recipe goes great as one of your holiday dishes, your guests will thank you for including it. I prefer to use jumbo shrimp in the recipe and with the cost of seafood continuously on the way up, I would recommend that you purchase a large bag to save on the cost. Sazon goya powder with coriander and annatto is one of the main ingredients in this recipe and can be picked up at most latin grocers, some big box grocery stores or online. I love garlic in my food, for those that would prefer a little less you can cut the garlic cloves in half, a large skillet should be used to cook the peeled and deveined shrimp, plus make a small incision along the back of the shrimp to absorb some of the sauce and you can leave the tail on.<br />

Happy 2018 to all the readers and with the new year upon us, if any of you are like me then a few pounds are ready to be shed from all the holiday food. I start the 2018 food blog year with a healthy, light and great side to accompany most of your featured dishes. A medium zucchini is just 33 calories and loaded with Vitamin C a supplement we all need to boost the immune system during the winter months. This recipe is quick to make and works great for a weeknight dish when time is not always on your side and vegans can even cook up two zucchinis and make it their main course. A grill pan skillet works great to give the zucchini that char broiled look, if you do not own a grill pan, then a regular skillet will have to do. Lemon Pepper is the main ingredient so need to be afraid to go heavy if you enjoy that mixture and I love a garlic taste so I make sure to add some garlic powder to the dish.<br />

I want to kick off this recipe with a Happy Holidays to everyone and I know its been awhile since I have posted a recipe but sometimes life just gets in the way, not of cooking but of blogging. This holiday season as always involves a lot of food and plenty of added pounds that I will need the whole month of January to burn off. I decided to share a great tilapia recipe that was a big hit over the holiday season.This recipe will add a bit of spice and if that is not something that you enjoy like I do then leave out the crushed chili flakes or just add a pinch to the recipe. You will need to make sure to rub the olive oil mixture all over the fish and make sure to let it stand a few minutes at room temperature in a large bowl. The bread crumbs should include an Italian blend and fresh parmesan would be great but if you do not have any on hand then use the parmesan in a container you can buy at all grocery chains. You can also bake a bit longer for extra crunchy fish.<br />

As the season changes and the fall season slowly chills the air, I always turn to one of my favourite types of recipes to warm my tummy and body, a good ole soup. I decided this time to cook a soup that you tend to eat when you start off the meal course at many wedding receptions you attend. This hearty soup filled with turkey meatballs and pasta not only warms you up but also fills you up so that your not hungry a short time after you eat. I chose turkey ground meat instead of beef or veal but any of the three will work well, seasoned bread crumbs is the way to go with the meatballs. The pasta used should be a small cut, like ditali, elbow, bowtow or paccheri and do not forget your vegetables, spinach, kale or collard for your greens and I decided to throw in some carrots myself but you can add peas or corn to the soup depending on your preferences. You will also want to use a 5 quart pot for the soup and a baking sheet to cook your meatballs beforehand.<br />

With the summer months winding down, we slowly take our outdoor cooking back indoors and what can be better then a healthy fish recipe to get the fall season underway. I continue to experiment with fish recipes and took a stab at some pacific snapper, which is a firm white fish that is often substituted for halibut. This recipe involves quite a bit of seasoning and a topping of my favourite sauteed vegetables, which are onion and garlic, it turns this into a beautiful dish that your palate will enjoy. You will want to use some heavy duty foil to place the washed snapper fillets onto and make sure to cut enough, so that you will be able to tightly seal the fish. A large skillet will be required to saute your vegetables and if you enjoy more then just onion and garlic be sure to add them all at the same time to skillet. When it comes to seasoning, the sky is the limit, sea salt and black pepper is a must but this mix of seasoning is enjoyable, unless your really anti something I would use the status quo.<br />

I took a recent trip to the East Coast to visit friends and when your in that part of the country, you have to make sure to enjoy a great lobster meal. This time though I decided to bring some live lobster back home with me so that I can enjoy a little more seafood for just a while longer. The best lobster meal can be a simple lobster boil with a great butter dipping sauce. You will want to have a large 8 quart pot and I would recommend that you choose a lobster that weights between a pound and a pound and a half for the best flavour. Those that are not accustomed to cooking a live animal there is a simple rule for lobster, do not drop the lobster into the pot with rubber bands on the claws, you will need to get them off first. What you want to do is hold the lobster up by the claws with the top facing you, the lobster will put a bit of a fight but just hang on until it tires itself out, cross the arms so it forms an X, hold the lobster firmly with one hand at the point of the cross and with your free hand cut the bands off. Drop the lobster into the pot head first, only letting go of your firm grip with one hand on the way in. When complete enjoy with a lemon garlic butter dip.</div>
