Chorizo Chickpeas Skillet Meal

It has been awhile since my last post as at times life gets in the way of blogging but  it doesn't stop me from making delicious recipes. I am glad to be back blogging with what I found to be a delicious and healthy recipe to share with you all. There is just something about smoked chorizo that gets my mouth watering and when you add protein and fiber rich chick peas to the dish it packs it with a tonne of flavour. You will need to use a large skillet for the meal and make sure that the beer you use is a pilsner but an ale will work almost as well. I went with a faster root for the chickpeas and just got them from a can, you will just need to wash them thoroughly before adding them to the dish. When it comes to the simmering of the recipe it depends how saucy you enjoy your meals but a longer simmer will reduce the liquid and make it sparse and thick which is the way I prefer this dish to be.
The chorizo I chose to use was spicy as this is my fav but for those with milder taste buds can chose a non spicy sausage.

Chorizo Chickpeas Skillet Meal Recipe
Prep Time: 10 minutes  Cook Time: 45 minutes  Servings: 4

Ingredients 
 2 tbsp of olive oil
2 links of smoked sausage (chorizo), coined then halfed
3 cans (540g) of chickpeas, drained and washed
1 can (284ml) of beef stock
250ml of pilsner beer
1 tsp of chili powder
1 tsp of onion powder
1 tsp of white sugar
1 cup of sweet red pepper, julienned
1/2 cup of parsley

Preparing Chorizo and Chickpeas
1- In a large skillet heat up olive oil on medium heat.
2- Add Chorizo to the pan and cook for five minues, stirring
3- Add chickpeas and stir to coat, bring to a boil and cook  for seven minutes.
4- Add beer, stock, chili powder, onion powder and sugar and reduce heat to a simmer and cook 30 minutes until liquid is sparse and thick.
5- Add parsley during last 5 minutes of cooking, stir to mix.
6- Enjoy !!!
