Spicy Kidney Bean Stew with Sausage

Growing up in a Western European family, there where always a few dishes that I loved when my family made it. The spicy kidney bean stew with sausage was right up there. I really enjoyed the richness of the beans, the sauce that I would use bread for dipping and the smoked sausage with its spicy flavour really gave it that final kick. This was one meal that I would not hesitate asking for seconds and at times thirds.

The dish takes just over 30 minutes to make and is a warm meal on a cold night but this doesn't mean you can't enjoy it when its hot outside. The choice of kidney beans is important, make sure you choose a brand name for a few cents more it will keep the beans from going mushy. The choice of sausage is up to you, you can go with a mild smoked sausage if your not a fan of spice. I personally enjoy the hot version of smoked sausage. You can pick up the sausage at your local butcher shop.

Spicy Kidney Bean Stew with Sausage Recipe
Servings: 6  Prep Time: 10 minutes  Cook Time: 35 minutes


Ingredients

2 cans (540 ml) of red kidney beans, not drained
1 whole spicy smoked sausage, half coined
1/2 medium onion, diced
1 garlic clove, diced
1 medium hot pepper, sliced with seeds
3 tbsp of olive oil
2 tbsp of pimento paste
1 tbsp of tomato paste
1 tbsp of hot sauce
1 tsp of paprika
1 tsp of salt
1 cube of chicken stock

Directions:

1- In a large pot heat up olive oil on low/medium heat and then add onion, garlic and hot pepper, mix together and cook until onions are transparent.
2- Add pimento paste and stir/mix for one minute.
3- Add sausage and cook for 3 minutes, stirring.
4- Empty cans of kidney beans into pot, then fill 3/4 of a can with water and add to pot, stir.
5- Add tomato paste, hot sauce, chicken stock, paprika and salt.
6- Stir together and cook for 25 minutes on medium heat, stirring occasional.
7- Get some bread ready and Enjoy!!!
