After a few tries I found a perfect combination of time and temperature along with some of my favourite seasonings mixed into the chicken fillet and avoided the mess that comes with cooking the chicken in a frying pan. Some may not enjoy the seasoning mixture that I went with but feel free to use some of your own blends until you have exactly what you want. It is much simpler to buy the chicken breast already filleted at your local grocery store but for those that do not mind adding a little additional time to their prep, go for it. Remember to wash your chicken and handle the fillets with tongs to avoid any contamination.

The holiday season is upon us as we try to enjoy time with family and friends while doing are best to maintain safe as this pandemic rages on. This is one of my favourite dishes growing up with my family, it is quick to make and so delicious you'll be wondering why you did not know about it sooner. The key ingredients to this recipe are potatoes, tuna and eggs and these just can not be substituted if you are looking to maintain an authentic western European style dish. The potatoes can be boiled or baked in the oven, it's really your choice if you are looking for a soft or crispy texture. The recipe below will describe how to boil the potatoes but if you are looking to bake them then what you will need to do is preheat your oven to 400F, mix the potatoes with olive oil sea salt, black pepper and garlic powder and bake covered for 45 minutes then uncover for the final 10 minutes. Add the remainder ingredients to your baking dish as the potatoes are the first to go inside it even if boiled.

Pasta Salad with Anchovies

With the spring upon us and the summer months not that far away, it's time to move on from the warm stews and soups and into crisp and cool foods and that are filling but do not make you want to plop yourself in front of the TV. Having a salad as a main dish has it's benefits and with the right ingredients can also be tasty and filling so that your not reaching for that bag of chips or box of cookies a short time after. This salad is great but the one catch you have to be a lover of anchovies which quite a few are not but it does not mean you can not have a go at it and find out if anchovies have won over your heart. This dish is quick and easy for those days or nights that time is not your best friend. The crumbled feta cheese mixed in gives it a distinct taste and gets your taste buds popping.
