Potato, Tuna and Egg Dish

The holiday season is upon us as we try to enjoy time with family and friends while doing are best to maintain safe as this pandemic rages on. This is one of my favourite dishes growing up with my family, it is quick to make and so delicious you'll be wondering why you did not know about it sooner. The key ingredients to this recipe are potatoes, tuna and eggs and these just can not be substituted if you are looking to maintain an authentic western European style dish. The potatoes can be boiled or baked in the oven, it's really your choice if you are looking for a soft or crispy texture. The recipe below will describe how to boil the potatoes but if you are looking to bake them then what you will need to do is preheat your oven to 400F, mix the potatoes with olive oil sea salt, black pepper and garlic powder and bake covered for 45 minutes then uncover for the final 10 minutes. Add the remainder ingredients to your baking dish as the potatoes are the first to go inside it even if boiled.

Potato, Tuna and Egg Dish Recipe
Prep Time: 10 minutes  Cook Time: 25 minutes  Servings: 4

Ingredients
4 medium sized red potatoes, peeled and diced
1 can (170g) of tuna in oil, drained
1 can (398ml) of peas and carrots, drained
3 eggs, boiled and sliced
1 cup of olive oil
1/2 cup of hot pepper rings
1/2 cup of green olives with pimento
sea salt to taste

Directions
Preparing Potato, Tuna and Egg Dish

1- Bring a pot of water to a boil on medium heat, then add potatoes, cook for 25 minutes or until easily pierced with fork.
2- Bring another pot to a boil and then add eggs, boil for 15 minutes on medium heat and remove eggs from pot, set aside.
3- Add cooked potatoes to 9 x 13 baking dish, add peas and carrots, season with sea salt and mix, add tuna, hot pepper rings and olives.
4- Drizzle with olive oil and stir/mix all ingredients together, top with egg slices.
5- Enjoy !!!
