European Style Garlic Shrimp

This recipe is a dish that is savory, spicy and with a lot of garlic, some of you will enjoy it as an appetizer before their meals, while others like me like to finish off seafood as a dessert. This traditional dish has been passed down the family tree, at times I even enjoy it as a quick snack with a side of bread for dipping. This recipe goes great as one of your holiday dishes, your guests will thank you for including it. I prefer to use jumbo shrimp in the recipe and with the cost of seafood continuously on the way up, I would recommend that you purchase a large bag to save on the cost. Sazon goya powder with coriander and annatto is one of the main ingredients in this recipe and can be picked up at most latin grocers, some big box grocery stores or online. I love garlic in my food, for those that would prefer a little less you can cut the garlic cloves in half, a large skillet should be used to cook the peeled and deveined shrimp, plus make a small incision along the back of the shrimp to absorb some of the sauce and you can leave the tail on.

Happy 2018 to all the readers and with the new year upon us, if any of you are like me then a few pounds are ready to be shed from all the holiday food. I start the 2018 food blog year with a healthy, light and great side to accompany most of your featured dishes. A medium zucchini is just 33 calories and loaded with Vitamin C a supplement we all need to boost the immune system during the winter months. This recipe is quick to make and works great for a weeknight dish when time is not always on your side and vegans can even cook up two zucchinis and make it their main course. A grill pan skillet works great to give the zucchini that char broiled look, if you do not own a grill pan, then a regular skillet will have to do. Lemon Pepper is the main ingredient so need to be afraid to go heavy if you enjoy that mixture and I love a garlic taste so I make sure to add some garlic powder to the dish.

Parmesan Crusted Tilapia

I want to kick off this recipe with a Happy Holidays to everyone and I know its been awhile since I have posted a recipe but sometimes life just gets in the way, not of cooking but of blogging. This holiday season as always involves a lot of food and plenty of added pounds that I will need the whole month of January to burn off. I decided to share a great tilapia recipe that was a big hit over the holiday season.This recipe will add a bit of spice and if that is not something that you enjoy like I do then leave out the crushed chili flakes or just add a pinch to the recipe. You will need to make sure to rub the olive oil mixture all over the fish and make sure to let it stand a few minutes at room temperature in a large bowl. The bread crumbs should include an Italian blend and fresh parmesan would be great but if you do not have any on hand then use the parmesan in a container you can buy at all grocery chains. You can also bake a bit longer for extra crunchy fish.

Wedding Style Soup

As the season changes and the fall season slowly chills the air, I always turn to one of my favourite types of recipes to warm my tummy and body, a good ole soup. I decided this time to cook a soup that you tend to eat when you start off the meal course at many wedding receptions you attend. This hearty soup filled with turkey meatballs and pasta not only warms you up but also fills you up so that your not hungry a short time after you eat. I chose turkey ground meat instead of beef or veal but any of the three will work well, seasoned bread crumbs is the way to go with the meatballs. The pasta used should be a small cut, like ditali, elbow, bowtow or paccheri and do not forget your vegetables, spinach, kale or collard for your greens and I decided to throw in some carrots myself but you can add peas or corn to the soup depending on your preferences. You will also want to use a 5 quart pot for the soup and a baking sheet to cook your meatballs beforehand.

Lemon Herbed Snapper

With the summer months winding down, we slowly take our outdoor cooking back indoors and what can be better then a healthy fish recipe to get the fall season underway. I continue to experiment with fish recipes and took a stab at some pacific snapper, which is a firm white fish that is often substituted for halibut. This recipe involves quite a bit of seasoning and  a topping of my favourite sauteed vegetables, which are onion and garlic, it turns this into a beautiful dish that your palate will enjoy. You will want to use some heavy duty foil to place the washed snapper fillets onto and make sure to cut enough, so that you will be able to tightly seal the fish. A large skillet will be required to saute your vegetables and if you enjoy more then just onion and garlic be sure to add them all at the same time to skillet. When it comes to seasoning, the sky is the limit, sea salt and black pepper is a must but this mix of seasoning is enjoyable, unless your really anti something I would use the status quo.

Boiled Lobster with Lemon Garlic Butter


I took a recent trip to the East Coast to visit friends and when your in that part of the country, you have to make sure to enjoy a great lobster meal. This time though I decided to bring some live lobster back home with me so that I can enjoy a little more seafood for just a while longer. The best lobster meal can be a simple lobster boil with a great butter dipping sauce. You will want to have a large 8 quart pot and I would recommend that you choose a lobster that weights between a pound and a pound and a half for the best flavour. Those that are not accustomed to cooking a live animal there is a simple rule for lobster, do not drop the lobster into the pot with rubber bands on the claws, you will need to get them off first. What you want to do is hold the lobster up by the claws with the top facing you, the lobster will put a bit of a fight but just hang on until it tires itself out, cross the arms so it forms an X, hold the lobster firmly with one hand at the point of the cross and with your free hand cut the bands off. Drop the lobster into the pot head first, only letting go of your firm grip with one hand on the way in. When complete enjoy with a lemon garlic butter dip.
