As the season changes and the fall season slowly chills the air, I always turn to one of my favourite types of recipes to warm my tummy and body, a good ole soup. I decided this time to cook a soup that you tend to eat when you start off the meal course at many wedding receptions you attend. This hearty soup filled with turkey meatballs and pasta not only warms you up but also fills you up so that your not hungry a short time after you eat. I chose turkey ground meat instead of beef or veal but any of the three will work well, seasoned bread crumbs is the way to go with the meatballs. The pasta used should be a small cut, like ditali, elbow, bowtow or paccheri and do not forget your vegetables, spinach, kale or collard for your greens and I decided to throw in some carrots myself but you can add peas or corn to the soup depending on your preferences. You will also want to use a 5 quart pot for the soup and a baking sheet to cook your meatballs beforehand.

Wedding Style Soup Recipe
Prep Time: 15 minutes Cook Time: 35 minutes Servings: 8
Ingredients
1 pound (454g) of ground turkey
6 tbsp of seasoned bread crumbs
4 tbsp of shredded mozzarella cheese
4 cloves of garlic, minced
15 cups of chicken broth
1 small onion, minced
2 carrots, chopped
1 cup of spinach, shredded
1 tbsp of olive oil
225g of ditali pasta
Directions
Preparing Wedding Style Soup |
1- Preheat oven to 375F.
2- In a large bowl, mix turkey, bread crumbs, garlic and cheese, then roll into1 inch balls.
3- Place meatballs on baking sheet and bake for 15 minutes, take out once done and put aside to cool.
4- Add olive oil and chicken broth to large pot, heat on medium until boiling.
5- Reduce heat to a simmer, add onions, carrots, spinach and pasta, cook for 12 minutes.
6- Carefully add the meatballs to pot with a laddle and simmer another 4 minutes.
7- Serve with grated parmesan cheese (optional)
