When looking for a healthy meal that involves a form of meat I always turn to turkey, ground turkey is cost efficient and you can substitute it in place of any ground meat to get it into a lower fat category. I learned to appreciate turkey and all its benefits as I got older, adding an abundant amount of your favourite vegetables just adds to this already healthy dish and makes sure you get all the vitamins you need for the day.
I used a wok to cook this dish as it was easier to get all the vegetables that I wanted to add, don't be shy to add as many as you like. The aroma while you cook just gets your mouth watering, you will need to make sure you position the wok properly when your ready to add the ground turkey to the pan. I also made sure to add a little hot sauce to my plate but that is optional for those the like a tad more spice.

Turkey Vegetable Medley Recipe
Prep Time: 15 minutes Cook Time: 14 minutes Servings: 2
Ingredients
3 tsbp of olive oil
1 lb of ground turkey
1 cup of green beans, chopped
1/2 cup of baby carrots, chopped
1/2 red bell pepper, chopped
1/2 white onion, chopped
2 stalks of green onion, chopped
10 grape tomatoes, halved
4 cloves of garlic, chopped
1 tsp of garlic powder
1 tsp of oregano
1 tsp of chili powder
1 tsp of sea salt
Directions
Cooking Turkey Vegetable Recipe |
1- Heat 2 tbsp of olive oil in large skillet on medium high heat.
2- Add onion, red pepper, carrots, green onion, tomatoes and cook for 4 minutes, stir every minute.
3- Add garlic and garlic powder and cook for another minute, stirring.
4- Push the vegetables to one side of the pan and position pan so that it is off the burner on side with vegetables.
5- Add remaining olive oil to empty side, add ground turkey and season with salt, chili powder and oregano.
6- Cook for 4 minutes without stirring, then break turkey up and stir until cooked through about 3 minutes.
7- Stir together turkey and vegetables and cook for an additional minute, season with more salt and chili powder if desired to taste.
8- Enjoy !!!
