Savoury Shrimp Fried Rice

For as long as I can remember I have always been a big fan of shrimp fried rice, whenever I am out with friends for a late night meal at a Chinese restaurant nothing beats getting a shrimp fried rice to accompany any other dish you may chose to order. Adding the proper hot sauce on top is the perfect final touch to a savoury meal. I am a seafood lover and the quickness of this dish has my mouth watering the whole time.

There are a lot of different things you can add to the shrimp fried rice dish when it comes to vegetables, there are plenty to choose from, green beans, celery, snap peas, sweet peppers and mushrooms work well besides the ingredients that I went with, pick them according to your taste. It is best to use a large wok when preparing the dish go with the healthy choice of brown rice and don't forget to top your dish off with a tasty hot sauce.

Savoury Shrimp Fried Rice Recipe 
Servings: 4  Prep Time: 10 minutes  Cook Time: 20 minutes

Shrimp Fried Rice

Ingredients
1 cup of brown rice
2 tbsp of hoisin sauce
4 tsp of soy sauce
2 tsp of seasame oil
1 tsp of thai green curry paste
4 tsp of vegetable oil, divided
2 large eggs, lightly beaten
2 tbsp of fresh ginger, minced
1 cup of frozen green peas
3 medium carrots, chopped
4 green onions, sliced
3 cloves of garlic, chopped
1 bag of raw shrimp (51-60 per pound), peeled and deveined

Directions:

1- Cook brown rice as per package directions, drain once cooked
2- Combine, hoison sauce, soy sauce, sesame oil and that curry paste in bowl, set aside
3- Heat 1 tsp of vegetable oil in wok over medium/high heat, add eggs and cook for 2 minutes, breaking egg into small pieces. Transfer egg to a plate.
4- Heat another 1 tsp of vegetable oil over medium/high heat and add shrimp, cook stirring until shrimp is pink about 2 minutes, transfer to a bowl.
5- Heat remaining vegetable oil over medium/high heat and add ginger cook until fragrant about 1 minute, stir in the frozen peas, carrots, garlic and green onions, cook for about 4 minutes.
6- Add rice, egg and shrimp to wok and cook for another 2 minutes, stirring to mix.
7- Add sauce mixture to wok and cook 1 more minute, stirring to mix.
8- Enjoy !!!
