Garlic Roasted Potatoes and Carrots

The holiday season is upon us and it is time to get that kitchen going as guests visit and pot lucks begin with family and friends. You can not go wrong with a great side dish, as many of us try to think what type of a main entree we would like to cook up we tend to not focus as much on what would go with that meal. My family always told me that a great entree needs the same quality of side dish to accompany it and make every bite enjoyable. This side dish is all vegetable and I like to stick to two of my favourites which are potatoes and carrots but you can also add some of your favs to the dish which can include zucchini, sweet peppers, celery or asparagus. The baking dish should be at minimum 9 x 13 but larger is fine to and when mixing all the ingredients do not be afraid to mix everything up with your hands so that you every vegetable is being seasoned properly. Cheese lovers can also sprinkle some parmesan on top or serve with some chopped fresh rosemary.

Garlic Roasted Potatoes and Carrots Recipe
Prep Time: 15 minutes  Cook Time: 60 minutes  Servings: 6

Ingredients
4 large carrots, julienned and cut in half
1.5 pound of fingerling potatoes, cut in half
1 cup of olive oil
1 tsp of sea salt
1 tsp of black pepper
2 tsp of garlic powder
1 tsp of paprika
4 twigs of rosemary, chopped (optional)

Preparing garlic roasted potatoes and carrots
1- Heat over to 400F
2- In a 9 x 13 baking dish or larger, add carrots and potatoes.
3- Pour olive oil over vegetables, add salt, black pepper, paprika and garlic powder, mix well with hands.
4- Cover baking dish with aluminum foil and place in oven.
5- Bake for 55 minutes and then remove foil and bake for an additional 5 minutes until potatoes are easily pierced with fork.
6- Sprinkle some fresh rosemary before serving
