Broiled Salmon with Marmalade Glaze

Salmon is one of my favourite fish, it wasn't always that way but as I got older, I acquired a taste for the fish, much to my mothers delight. In a family that is big on fish, it was better late then never for me. Salmon is loaded in Vitamins B-12, B-6 and protein and something that we all need Omega 3 with it's healthy benefits. Wild salmon should always be the choice over farmed salmon as there is less contamination and fish goes pretty much with any side of your choosing, go vegetables if you can.

Broiling the fish makes this a super quick recipe, which works well for a weeknight meal when time is not your friend. A shallow baking dish is what I used and you can marinade the salmon right inside the dish. This is a dish that will impress anyone that might be over and the marination adds a super great taste that will make your taste buds jump to attention.

Wholesome Spanish Rice with Clams

 I love my seafood and am always looking for new ways to enjoy them as a meal. These tasty mollusks or clams as they are known to most has always been something of fascination with me. They can be served in a shell or out and go well with just about anything, whether its rice, pasta or even mixed with some quinoa, my family introduced me to Goya seasoning along time ago and they are a great seasoning for most seafood dishes especially when you want a little zing.

I like to try to make nutritious and delicious meals quick if I can and this is a perfect meal for a weeknight or in my case two to three nights. I made sure to have my clams frozen and out of shell as well as my peas frozen. They are easy to thaw as you just run them in cold water and this only takes a few minutes. I find a large size wok is perfect for the meal and Uncle Ben's rice makes the meal even faster, don't forget the goya seasoning as it is a key ingredient for this dish.
