Parmesan Chicken Bites

I like to try a variety of different chicken recipes, I always prefer to bake the chicken over frying and with the lower prices lately on chicken it makes purchasing in bulk portions that much better. Chicken was always a staple in my family household. Sundays always involved some form of chicken recipe that my parents would conjure up and they would also make sure to stick the chicken in the oven. The right spice mixture goes along way and makes sure that the chicken is never bland while it is baking.

I use a baking sheet to place all the chicken bites, don't forget to place some parchment paper over the baking sheet, as this keeps anything from sticking. This is a low calorie meal that you can serve with vegetables or even your favourite pasta. Panko bread crumbs was my choice for this recipe but you can usually regular bread crumbs if that is all you have. Have a ziploc bag handy for a cleaner mix of ingredients before you place it on the baking sheet. Kids will love these with a side dipping sauce of your choice.

Parmesan Chicken Bites Recipe
Servings: 4  Prep Time: 10 minutes  Cook Time:  30 minutes

Chicken Bites Recipes

Ingredients
1 pound of chicken breast cut into 1" pieces
1 large egg
3/4 cup of panko bread crumbs
1/4 cup of grated parmesan cheese
1/2 tsp of dijon mustard
1 tbsp of all seasoning powder
1 tsp of garlic powder

Directions:
1- Preheat the oven to 350F
2- Place the chicken in large bowl.
3- Whisk together the egg and mustard in a small bowl.
4- Pour the egg mixture over the chicken and stir to coat well.
5- Combine remaining ingredients in large resealable plastic bag, add chicken and shake to coat well.
6- Place chicken on baking sheet and bake for 30 minutes until sizzling.
7- Enjoy !!!

I prefer baking my chicken 'bites' as well though every once in a while, a shallow fried chicken cutlet or schnitzel is a real treat. I wonder if one could make a Buffalo wing version of these bites. Love the flavours but find it crazy that chicken wings are usually more expensive to buy than boneless chicken breast on sale!!
