The pandemic continues to rage on and for a lot of us time spent at home has never been at an all time high. One thing we can do to help pass the time is to make sure that we feed ourselves right and keep busy and what better way to do that then to spend time in the kitchen cooking up a storm. This was my first crack at a meatloaf recipe and I feel it was so good that I just had to share it with all of you around the world. The recipe is quite simply and filling and what more can you ask for. I would recommend that you give it a try with the ingredients before swapping in some of your favourites, I prefer a sweet BBQ sauce over Ketchup and the saute yellow onion adds a nice taste to the dish. I also went with ground turkey to keep the meal a bit healthier. The two loafs was my way of adding a cool twist to the regular meatloaf dishes and I did find it better to cook on a wire racked on a baking sheet on top of parchment paper. This keeps the meatloaf from getting soggy.

Turkey Meatloaf Recipe
Prep Time 15 minutes  Cook Time: 65 minutes  Servings: 2
 
Ingredients
 1 pound of ground turkey
1 small yellow onion, diced
1 tsp of olive oil
1 egg, whisked
1/2 cup of panko bread crumbs
1 cup of bbq sauce, divided
1/2 tsp of sea salt
1/2 tsp of black pepper
1 tsp of garlic powder
1 tsp of worcestershire sauce
1 tbsp of hot sauce (optional)

Preparing Turkey Meatloaf
 
1- Preheat oven to 375F.
2- In a small skillet, add olive oil and saute onion until translucent and fragrent on low heat for about 5 minutes and set aside to cool off.
3- In a large bowl add turkey and all other ingredients, minus half the BBQ sauce and mix well with hands until combined.
4- Add onion to bowl, make sure it is cooled off and mix in with hands.
5- Mold into two even loaves and spread the remaining bbq sauce all over.
6- Place on parchment paper and on top of wire rack, which should fit on top of baking sheet.
7- Bake in oven for 60 minutes uncovered, let cool once complete for about 10 minutes before cutting into with a bread knife.
8- Enjoy !!!
