Classic Club House Sandwich

The classic pub style sandwich you can have at home instead of getting out into the world which is currently going through a corona virus pandemic. The classic club house is one of my favourite sandwiches when out a pub and munching down on some pub food classics. This is a recipe that you can enjoy in the comfort of your own home, especially for those that can not get out and about as they normally would. I created a classic club at home with a couple of changes that worked out just great but feel free to substitute ingredients as you see fit. I boiled the chicken for a quicker meal prep and the bacon was baked in the oven to avoid mess covered in aluminum foil, you'll need to bake longer then time shown if you prefer your bacon to be crispy. I am not a mayo fan so replaced it with some old style dijon mustard and the texas style toast bread is a must, make sure you use real cheese slices and not the process kind for best taste.

Classic Club House Recipe
Prep Time: 15 minutes  Cook Time: 30 minutes  Servings: 4

Ingredients 
2 chicken breasts, skinless and boneless
8 slices of bacon
4 slice of cheddar cheese
12 slices of texas style toast bread
2 tbsp of olive oil
4 tbsp of butter
1 tomato, diced
2 large leaves of lettuce, shredded
4 tbsp of old style dijon mustard
salt and black pepper to taste

Preparing Classic Club House Sandwiches
1- Heat pot of water to a boil on medium heat.
2- Preheat oven to 375F or per bacon package instructions.
3- Place chicken breast into boiling water and cook for 20 minutes.
4- Place bacon on baking sheet and cook for 30 minutes or longer if want more crispy.
5- Cut up lettuce and tomato and set aside.
6- Toast all pieces of bread and set aside.
7- Place cooked chicken into a baking dish and shred, season pieces with olive oil, salt and black pepper and mix.
8- Remove bacon from oven and cut into 2 inch pieces.
9- Butter one side of bread, place chicken, then tomato, add mustard and top with lettuce.
10- Place second piece of bread on top and butter top portion of bread, add cheese slice and bacon pieces, top with third bread slice.
11- Repeat steps 9 and 10 until all bread and ingredients used up.
12- Cut triple decker club into quarter pieces, triangle shaped.
13- Enjoy!!!
