The holiday season is upon us and after many filling lunches and dinners with tonnes of leftovers to hold us over for days, it would be nice to have a tasty breakfast during the season especially if we had one too many cups of eggnog. This was something I came up with one morning while laying in bed wondering what would be on the menu for breakfast. This tasty dish is loaded with foods to get us fueled for the day and is filling in its own sense and does not require anything additional sides to accompany it. The key to this recipe is the base and you must use a Bavarin style bread, Rudolph's is my go to multi grain bread as the size of the loaf is perfect for this meal as well as light breakfasts. Shredded mozzarella gives it a mild taste but if you prefer something more sharp or intense flavour you can go with strong cheddar or gorgonzola. A natural butter spread is preferred over margarine and make sure to use a large skillet. Top with sunny side eggs to give it that island look.

Breakfast Island Egg Recipe
Prep Time: 10 minutes  Cook Time: 15 minutes Servings: 2

Ingredients
4 eggs
2 slices of bavarian multi-grain bread
1 green onion chopped and divided
1 cup of shredded mozzarella cheese
5 tbsp of butter
6 large leaves of spinach
1 tsp of sea salt
1 tsp of black pepper
1 tsp of garlic powder
4 tbsp of olive oil/canola oil blend

How to prepare Breakfast Island Eggs
1- Heat a large skillet on low to medium heat, add half of oil blend and 1 tbsp of butter.
2- Butter one side of each slice of bread with 1 tbsp of butter.
3- Add bread slices to skillet, butter side down, sprinkle slices with with half a cup of shredded cheese on each and cook for 2 to 3 minutes or until cheese is melted.
4- Remove slice of bread to separate plates and sprinkle with 1/4 of green onion on each slice and add 3 leaves of Spinach to each slice in row.
5- Add 1 tbsp of butter to skillet (more oil if you like) and add 2 eggs, season with half the salt, pepper and garlic powder, cook about 2 minutes.
6- Remove eggs and lay on top of slice of bread that should be covered in spinach.
7- Repeat steps 5 and 6 for remaining two eggs.
8- Sprinkle remaining green onion on egg covered bread slice.
9- Enjoy !!!
