Blackened Sole Fish

As spring approaches and for those that may have over indulged during a harsh and cold winter, its a great time to bring a healthy dish of fish back into your menu. I had the luxury of having my family serve plenty of different kinds of fish when I was growing up, some weeks we would eat more fish then any type of meat and it was always seasoned to perfection accompanied by a special side of vegetables. I inherited this trait as I have gotten older except that I chose to always make sure that I bake or broil the fish over any type of pan frying. You can use a baking dish or baking sheet to cook the fish and make sure you select a type of white fish. I've gone with sole as this is one of my favourite types of white fish. The spices make a great combination of taste and flavour, I recommend using some all purpose seasoning but it could have a bit of a kick for some.

Turkey Vegetable Medley

Ground Turkey Recipe




















When looking for a healthy meal that involves a form of meat I always turn to turkey, ground turkey is cost efficient and you can substitute it in place of any ground meat to get it into a lower fat category. I learned to appreciate turkey and all its benefits as I got older, adding an abundant amount of your favourite vegetables just adds to this already healthy dish and makes sure you get all the vitamins you need for the day.
I used a wok to cook this dish as it was easier to get all the vegetables that I wanted to add, don't be shy to add as many as you like. The aroma while you cook just gets your mouth watering, you will need to make sure you position the wok properly when your ready to add the ground turkey to the pan. I also made sure to add a little hot sauce to my plate but that is optional for those the like a tad more spice.

Triple Cheese Hamburger

The summer season may be over but that does not mean that burger season has to end just yet. One of the worlds favourite meals or some would say snack the Hamburger is being made in so many different ways that I could not help but to try my hand at one and the results where terrific for this palate. I have been eating burgers for as long as I can remember, as a kid my great grandma would make one for us at lunch time and we would woof them down in a heartbeat hoping that we could have another made on the grill.

People like a variety of sized burgers, I feel that the 1/4 pound burger is sufficient and lets you enjoy the condiments and ingredients better, too much burger takes away from the flavours that we want to enjoy with our burger. You can top your burger anyway you like once its done, but what everyone needs to remember is that when making a burger just let it cook once per side and don't press the burger hoping to cook it faster or you will dry it out as this lets the juice escape. You can pan grill the burgers indoors or even use a skillet with a little butter. I decided to load the cheese, triple cheese burger, why have one type only?

Wholesome Spanish Rice with Clams

 I love my seafood and am always looking for new ways to enjoy them as a meal. These tasty mollusks or clams as they are known to most has always been something of fascination with me. They can be served in a shell or out and go well with just about anything, whether its rice, pasta or even mixed with some quinoa, my family introduced me to Goya seasoning along time ago and they are a great seasoning for most seafood dishes especially when you want a little zing.

I like to try to make nutritious and delicious meals quick if I can and this is a perfect meal for a weeknight or in my case two to three nights. I made sure to have my clams frozen and out of shell as well as my peas frozen. They are easy to thaw as you just run them in cold water and this only takes a few minutes. I find a large size wok is perfect for the meal and Uncle Ben's rice makes the meal even faster, don't forget the goya seasoning as it is a key ingredient for this dish.

Sloppy Bachelor Burger

Now that the weather is finally getting warmer, it's a great time to hit the BBQ outside for some of your favourite grilled summer foods and what is summer food without a wholesome hamburger. I do enjoy my burgers on the grill and for some reason they always seem to taste so much better when the weather is warm outside. Those of you that can't BBQ because you dont own a BBQ or live in an apartment complex, no need to worry because the sloppy bachelor burger will get your taste buds jumping in the summer fun.

In a different take from an old favourite the sloppy joes burger, I make sure to get my hands dirty to come up with a tasty option that is a low calorie burger which you can add just about any form of ingredient that your heart desires. I like to use a whole wheat kaiser bun and make sure to add a tonne of spices to the ground beef, I use medium ground beef but you can go lean for even less calories. Once complete make sure to top the burger with all your favourite condiments and give it that wow factor.

Baked Tilapia with Garlic Butter Mix

I always enjoyed growing up in a household that loved to eat fish. There are so many fish to choose from, with many different tastes and can be made in many different ways. Tilapia is a white fish that you really have to season properly to give your taste buds a jolt or what can happen is a very bland tasting fish. As always I love to bake my fish in the oven, this keeps your home from having that wonderful fish smell that your nose stops smelling but everyone that comes to visit gets a good whiff off.

This dish involves boneless tilapia fillets which if you choose, you can cut in half if your looking to feed a large assortment of people or just so that you have left overs for another day. The garlic butter and seasoning used makes sure that you are enjoying this fish dish. I broil the tilapia just at the end of baking for a few minutes just to add some crispness to the fish. You can add vegetables in the baking dish to cook at the same time as the tilapia so that you have your side. Carrots, broccoli and green beans are a few of the vegetables I like to place inside the dish with the tilapia.

Sweet Potato, Carrot and Coriander Soup

These cold winter days give you plenty of time indoors to stay warm and no better way to keep warm then a warm winters soup. Soup and winter seem to go together like bacon and eggs or cheese and crackers. I really enjoy experimenting in the winter to find a soup blend that tastes delicious and I feel that this is one my mom would be proud of. This soup is tasty, warm and most important has you wanting more, the soup is also all vegetables aside from the chicken broth that is used.

The one thing about mixing and matching vegetables is finding ones that work well together, you will only know if this is the case when the soup is done and you have a mouthful of it but I have found that onions and carrots always go well together, sweet potatoes was something I though I would try adding to these two along with fresh coriander. Go for a low sodium chicken broth and make sure that you have a hand held blender that can puree the soup at the end and make sure to use a large pot.

Homemade Mashed Potatoes

Anything home made is always one of the more delicious and healthier ways to go when you are eating, the main reason of course is that we know everything that we are putting into our own food. I am a big fan of homemade sides, not only are they easy to make but they go so well with your main entree. I always grew up with a few options on my plate when it was time to sit down for a meal and a good side with the entree is something that hits the spot.

Homemade mash potatoes always beat the box kind, they are so easy to make and for those of you worried about time, give your head a shake will you. My potatoes of choice when making mash potatoes are Russet, they are higher in starch and lower in moisture and the result when boiled and mashed is a smoother texture. Milk gives a bit more of a creamy texture and butter brings out that the great taste that your buds will enjoy with the remaining ingredients, use a potato masher to get a mixture of creamy and chunky potatoes.

Penne with Smoked Sausage

Smoked sausage was always a great fall tradition in my family, I recall a tonne of pork meat at home being run through a mincer and coming out of a sausage funnel into a lamb intestine. Then my grandma would prick the sausage and take it out into the backyard and smoke them for hours in the backyard chimney for what felt like days. Smoked sausage is a memory I always cherish as it brought the family together and boy was it yummy when it was done.

I hope to one day carry on the family tradition but for now, the local butchers have all the smoked sausage you need in a variety of flavours from mild to spicy hot. I am not much of a pasta eater but when I do go with pasta its usually penne but you can use just about any type of pasta with this dish, so throw in your favourite.
A wok or large deep skillet is the choice of pan I would go with but you can also use a large pot to cook and mix the sausage with other ingredients.

Savoury Shrimp Fried Rice

For as long as I can remember I have always been a big fan of shrimp fried rice, whenever I am out with friends for a late night meal at a Chinese restaurant nothing beats getting a shrimp fried rice to accompany any other dish you may chose to order. Adding the proper hot sauce on top is the perfect final touch to a savoury meal. I am a seafood lover and the quickness of this dish has my mouth watering the whole time.

There are a lot of different things you can add to the shrimp fried rice dish when it comes to vegetables, there are plenty to choose from, green beans, celery, snap peas, sweet peppers and mushrooms work well besides the ingredients that I went with, pick them according to your taste. It is best to use a large wok when preparing the dish go with the healthy choice of brown rice and don't forget to top your dish off with a tasty hot sauce.

I always try to find a healthy side to go with my entrees. Vegetables are always a great choice as a side for just about anything, whether your eating fish, meat or chicken. The best things about vegetables is that you can heat up the majority of them and with the right mix and blend of ingredients turn them it a wonderful side.
I have to admit I enjoy just about any vegetable and growing up my family always made sure to have a garden growing in the summer months. As I got older I decided to get a little space for myself in the garden and try growing some vegetables.

I planted sweet and hot peppers, cucumbers, tomatoes to name a few and every year would experiment with a vegetable that I hadn't tried before, one of the best experiments involved corn until the neighbourhood racoons though it was time to snack on them and that was the end of that. The one vegetable though that just never seemed to grow right where mushrooms but I'm always glad that the local grocer has a bunch of them to choose from. So after quite a few experiments in the kitchen, I feel that I have found the right tasting side of mushrooms for any plate. These mushrooms will have your company asking for seconds.

Fusilli Turkey Skillet Meal

Growing up in a busy household my mom would do her best to make sure their was a meal ready for dinner so we could all sit down and eat during the weekdays together, when there wasn't much time to stir up a meal mom would make something quick to feed the hungry household and at the same time make sure that it was filling and flavourful, this meal goes somewhat along the lines that I learned growing up.

The skillet meal is something we can all make when we are pressed for time and you can make it with either ground turkey or ground beef, ground anything you like really. The meal is done and ready to eat in about 20 minutes time, the key here is to have a skillet large enough to fit the pasta and ground turkey at the same time. A large skillet or wok would work best for you. Don't worry if you don't have fusilli on hand, penne can work just as well. I also looked for a version that was low in calories but offered the same great taste.

Garlic Baked Basa Fish

The Basa Fish as it is known in North America is a type of catfish that is native to Asia, the white fish is a fresh water fish and can be bought at relatively cheap price due to them being a very fast growing fish. The Basa Fish is becoming a very popular in North America not only for it's low price but the fact it is a very tasty fish. The fish is high in protein and low in fat and contains the good fat that we all need in Omega 3.

This recipe takes less then 30 minutes to bake and is great for a week night meal, if you make a few servings then you can take it to work for lunch the next day or have it again for dinner the following night. Baking fish is one of the healthier ways you can make fish and more importantly your home wont have any odor as you would get from frying the fish. Add your favourite side to go along with the Basa, whether that be rice, pasta or vegetables.
