Wholesome Spanish Rice with Clams

 I love my seafood and am always looking for new ways to enjoy them as a meal. These tasty mollusks or clams as they are known to most has always been something of fascination with me. They can be served in a shell or out and go well with just about anything, whether its rice, pasta or even mixed with some quinoa, my family introduced me to Goya seasoning along time ago and they are a great seasoning for most seafood dishes especially when you want a little zing.

I like to try to make nutritious and delicious meals quick if I can and this is a perfect meal for a weeknight or in my case two to three nights. I made sure to have my clams frozen and out of shell as well as my peas frozen. They are easy to thaw as you just run them in cold water and this only takes a few minutes. I find a large size wok is perfect for the meal and Uncle Ben's rice makes the meal even faster, don't forget the goya seasoning as it is a key ingredient for this dish.

Mini Blueberry and Grape Pancakes

Who does not enjoy a quick breakfast in the morning and what better breakfast then quick and easy to make mini pancakes. Breakfast is the most important meal of the day but many of us in our fast pace lives tend to take this meal for granted. This is an easy breakfast that you and the family can enjoy, not only is it nutritious but if you have the time, you will want seconds and maybe thirds. I will even make sure you have the pancakes down pat for those that are not sure how to make pancakes.

I like to purchase a buttermilk pancake mix and all you have to do is follow the instructions on the box, you can use water to mix with the powder but I prefer to go with 2% organic milk but you can use any milk you like. The grapes and blueberries are fresh and make sure the grapes are seedless. I choose these fruits but you can experiment with any that you enjoy. 1/2 measuring cup is the secret to the mini pancakes as you will scoop the mixture from the bowl and pour to form your mini pancakes.You can use a pancake griddle or just go with a regular non stick skillet and make sure to grease it before adding the pancake mixture.

Parmesan Chicken Bites

I like to try a variety of different chicken recipes, I always prefer to bake the chicken over frying and with the lower prices lately on chicken it makes purchasing in bulk portions that much better. Chicken was always a staple in my family household. Sundays always involved some form of chicken recipe that my parents would conjure up and they would also make sure to stick the chicken in the oven. The right spice mixture goes along way and makes sure that the chicken is never bland while it is baking.

I use a baking sheet to place all the chicken bites, don't forget to place some parchment paper over the baking sheet, as this keeps anything from sticking. This is a low calorie meal that you can serve with vegetables or even your favourite pasta. Panko bread crumbs was my choice for this recipe but you can usually regular bread crumbs if that is all you have. Have a ziploc bag handy for a cleaner mix of ingredients before you place it on the baking sheet. Kids will love these with a side dipping sauce of your choice.

Spicy Breaded Garlic Chicken

When your looking at keeping your calorie count low, skinless boneless chicken breast is one of the better options out there. This chicken recipe hits the spot and comes with a little kick to it, that keeps your taste buds on attention. My folks introduced me to all seasoning spice from the islands and this spicy powder should only be used in very small teaspoons or the heat might have you reaching for bread or milk pretty quick. The best thing about this recipe is that its baked so a healthy meal to boot.

The first your going to need to do is grab your chicken breast and cut it in half down the middle length wise. A large baking dish will be required and you can crush a garlic clove or for those short on time there is nothing wrong with using garlic paste that you can find at your local grocer. This dish is so easy to make the whole family will enjoy, especially the kids. You won't even require any dipping sauce, the chicken is made just right.

Sloppy Bachelor Burger

Now that the weather is finally getting warmer, it's a great time to hit the BBQ outside for some of your favourite grilled summer foods and what is summer food without a wholesome hamburger. I do enjoy my burgers on the grill and for some reason they always seem to taste so much better when the weather is warm outside. Those of you that can't BBQ because you dont own a BBQ or live in an apartment complex, no need to worry because the sloppy bachelor burger will get your taste buds jumping in the summer fun.

In a different take from an old favourite the sloppy joes burger, I make sure to get my hands dirty to come up with a tasty option that is a low calorie burger which you can add just about any form of ingredient that your heart desires. I like to use a whole wheat kaiser bun and make sure to add a tonne of spices to the ground beef, I use medium ground beef but you can go lean for even less calories. Once complete make sure to top the burger with all your favourite condiments and give it that wow factor.

European Egg Drop Soup

As the cold season starts to finally let up, I complete my final delicious soup until the months of fall. I have never been a big fan of eating soup on hot summer days, the time of year just doesn't give me that craving for something warm and hearty to put into my stomach. As I've mentioned before soups where always a popular choice in my household growing up, not only are they filling but you can always accompany them with a sandwich or have them as a starter to any meal.

Make sure that you use at least a 5 quart pot when preparing the soup, I have chosen to use spinach in the soup but kale or collard work just as well and the pasta can be any from elbow, bowtie or ditalini. If you have the time you can make your own chicken broth or just get a box of low sodium chicken broth from your local grocers. You will need to finely chop the vegetables so if you have a chopper at home, this would be ideal especially to get the onion cut up.

Seasoned Sea Scallops

Who doesn't enjoy fresh baby scallops, well not all people but I have always been a big fan of any type of seafood, since a very young age. My family was never huge fans of having sweets to finish a meal, we would all enjoy some kind of seafood dish to end your entree on all special occasions. This is not to say there where not sweets for guests but the main core of the family always pined for what seafood my mom or dad had prepared this time, sometimes their was more then one.

Sea scallops can be made in a variety of ways, from on a skillet to baked or broiled, some people even try to poach scallops. I love to bake any type of creature from the water, not only does it leave your home smelling the same but it is always much healthier option for us. You will require a baking pan covered with parchment paper and be sure to use the spices that tickle your taste buds if you don't enjoy any of the ones below. Seasoned bread crumbs add an extra dose of flavour to your dish.

Sweet and Spicy Chicken Thighs

Who doesn't enjoy a good piece of chicken and one of the tastiest chicken parts I find are the chicken thighs when made properly it just gets your taste buds going. The darker meat tends to go down nicely and when baked keeps the meal at a healthy level. The fact my grandfather had a farm back in his mother land, he made sure that the family got familiar with every part of the chicken, even the feet haha. Chicken is full of protein and is a good source of many health benefits so get out there and get yourself some chicken.

This dish is baked in the oven in under 60 minutes inside a baking dish, I make sure to use a tonne of different sauces and spices with two of the main ingredients being honey and bbq sauce. You can mix and match any ingredient that you enjoy just make sure to keep the two mentioned. Once your chicken is baked to your desired taste, make sure that you pour the sauce thats cooked in the dish all over the chicken to give it even more flavour, your taste buds will thank you for it. Boneless and skinless chicken thighs is the best option here.

Baked Tilapia with Garlic Butter Mix

I always enjoyed growing up in a household that loved to eat fish. There are so many fish to choose from, with many different tastes and can be made in many different ways. Tilapia is a white fish that you really have to season properly to give your taste buds a jolt or what can happen is a very bland tasting fish. As always I love to bake my fish in the oven, this keeps your home from having that wonderful fish smell that your nose stops smelling but everyone that comes to visit gets a good whiff off.

This dish involves boneless tilapia fillets which if you choose, you can cut in half if your looking to feed a large assortment of people or just so that you have left overs for another day. The garlic butter and seasoning used makes sure that you are enjoying this fish dish. I broil the tilapia just at the end of baking for a few minutes just to add some crispness to the fish. You can add vegetables in the baking dish to cook at the same time as the tilapia so that you have your side. Carrots, broccoli and green beans are a few of the vegetables I like to place inside the dish with the tilapia.
