Veal Scallopini with Parmesan Cheese

I have always been a fan of a good veal, whether it is placed in a bun covered with onions, mushrooms and peppers or on a plate, served with rice and veggies, a veal that is cooked and seasoned right just melts in your mouth. A popular veal dish is the veal scallopini and I feel that I have created a recipe that I can say I really enjoy and I feel that others will enjoy also. When you arrive at the grocers or butcher shop, make sure to select fresh veal cutlets and purchase a quantity that you will  prepare and cook in the same day. I feel that veal is one of the meats that just doesn't taste the same if you throw it in the freezer and thaw to eat at a later date. A large skillet is a must, as you will be quick frying the seasoned veal. Paremesan cheese and bread crumbs seasoned with a mixture of herb spices add the right taste and flavour to your meal. The last choice you will make is if you want to eat the veal on a plate or a bun.

Veal Scallopini with Parmesan Cheese Recipe
Prep Time: 10 minutes  Cook Time: 5 minutes  Servings: 4

Ingredients

4 veal scallopini cutlets (4oz each)
1 egg
1/4 cup of all purpose flour
2 tbsp of water
1 cup of bread crumbs
1/2 cup of grated parmesan cheese
1/4 cup of unsalted butter
1/2 tsp of garlic powder
1/2 tsp of chili powder
1/8 tsp of sea salt and black pepper
1/2 cup of parsley (optional)

Preparing Veal Scallopini

1- Mix together flour, salt, black pepper, garlic and chili powder in a bowl.
2- Beat egg and water in second bowl.
3- Combine bread crumbs and parmesan cheese in dish.
4- Dip each veal cutlet in the flour mixture, then the egg mixture and finally the bread crumb mixture.
5- Heat a large skillet on medium/high heat and add butter, melt.
6- Add the cutlets and cook 2 minutes per side.
7- Garnish with parsley if desired.
8- Enjoy !!!
